Capt. Sonny was not pleasant to my family. I know the weather was not good and it seemed like he did not want to be out fishing that day. He has to remember that not everyone is a pro fisherperson. The first mate was nice at least. I really feel bad that my family came down to visit and the experience was not good. I will not be using him again.

Black grouper are the heavyweights of our reef fishing, with their olive-gray bodies covered in dark rectangular blotches. Most average 2-3 feet, but the big ones can push 4+ feet and 50+ pounds. These bruisers live around offshore structure - wrecks, ledges, and rocky bottom in 30-300 feet of water. Cold weather brings them shallow, while they head deeper in summer. What guests love is the pure power - once hooked, they'll test every piece of your tackle with their bulldog runs straight for the rocks. The meat is outstanding too - firm, mild, and perfect for the grill. Here's the deal: use heavy tackle with at least 20 pounds of drag. When you feel that thump, reel fast and hard to get them up and away from structure before they cut you off.

Redfish are the bread and butter of our shallow water fishing, easily recognized by their copper-bronze color and signature black spot near the tail. Most run 20-35 inches, but we see plenty of "bull reds" pushing 40+ inches. These fish love super shallow flats, oyster bars, and grass beds - sometimes in water so thin their backs stick out. They feed year-round here, but fall and winter months are prime time when they school up. What makes redfish so popular is their willingness to eat and their bulldogging fight once hooked. They're also great on the table with mild, flaky meat. The secret is staying quiet and watching for tailing fish or nervous water. Once you spot them, cast past the fish and work your bait back through their path - they spook easily in skinny water.

Sheepshead are the "convict fish" with their black and white stripes, but don't let their looks fool you - they're some of the best eating fish around. Most weigh 1-8 pounds, though 20-pounders show up near deeper structure. You'll find them around any barnacle-covered pilings, bridges, and docks where they feed on crabs and shellfish. Spring months February through April are prime time when they gather to spawn. What guests love is the challenge - these fish are notorious bait thieves with human-like teeth that can strip your hook clean. The payoff is sweet, mild white meat that's worth the effort. My tip: keep your bait pinned tight to the hook and fish right against the structure. When you feel that telltale nibble, set the hook hard and fast.
